The second I heard the words ‘healthy edible cookie dough’ I was like SIGN ME UP! The quarantine baking has gotten the best of me so I love finding healthier versions of treats I love. This cookie dough made from garbanzo beans is to eat by the spoonful (not to bake) and is absolutely to-die-for!

@Nicole_thenomad originally posted this video about making healthy edible cookie dough and I knew I had to try it! I made it using her recipe a few times and couldn’t put down the spoon – the whole bowl would be gone that night.

When I calculated the calories, though, I realized that if I’m not going to have any self-control I really need to make it a bit healthier. So I played around with the recipe and created a version that cuts down the calories quite a bit while still making it absolutely delicious! The biggest changes are PB Fit instead of peanut butter, stevia instead of the full serving of maple syrup and adding cinnamon.

Overall, I can’t believe garbanzo beans can actually turn into cookie dough! This has become a staple dessert in our household and I love that it’s essentially guilt-free!

Ingredients

  • 1 can garbanzo beans (chickpeas)
  • 2 Tbsp PB Fit
  • 4 Tbsp Almond Flour (optional*)
  • 1 Tbsp vanilla extract
  • 1/2 tsp stevia drops
  • 1 tsp cinnamon
  • Splash of maple syrup
  • Chocolate chips to taste

Directions

  1. Open the can of garbanzo beans and drain 1/2 of the liquid
  2. Pour your garbanzo beans into a blender or food processor
  3. Add PB Fit, almond flour, vanilla, stevia drops, cinnamon & maple syrup. (*note: I sometimes take out the almond flour to make it even healthier)
  4. Blend on low in blender or food processor (I use our Ninja on the low setting)
  5. Pour into a bowl and stir in chocolate chips to taste (I usually do around 1.5-2 Tbsp)
  6. Enjoy!

Nutritional Info

The whole bowl of this recipe has 750 calories, 31g fat (7g saturated fat), 90g carbs (24g Fiber), and 34g of protein. It should normally be at least 3 servings which means each serving would have 250 calories, 10g fat, 30g carbs and 11g protein. Not bad for an indulgent dessert!
